Strawberry season is starting slowly here in Nor Cal and I’ve been getting them in my organic box. I was looking for something a bit special for breakfast and found a recipe for Strawberry Banana waffles. Yum!
These were pretty darn tasty. I was worried about the strawberries getting burnt in the batter but they turned out fine since I chopped them so small. I also used strawberry flavoured agave instead of maple syrup in the batter. It was a fine idea. The final product was a bit tough (I had to use a knife, the husband used his hands which is my preferred choice for waffles) but the flavour was fun, especially with more strawberries and bananas on top.
