Oh muesli, I can’t get enough of you. Even if I forget to soak you overnight. The calorie count honestly isn’t that bad for something so filling. Plus, it’s a great mixer with fruit. I’m starting on another summer fruit kick. The berries are showing up in my CSA and I love it.

Tofu bahn mi for lunch. Honestly, it was just okay. I forgot they put mayo on it and that’s just weird. Lots of fresh jalapeños though plus sriracha. I wanted something sweet after the spicy so I had a banana that had seen better days.

Dinner was pretty quick. I did a stir fry with veggies that were in my fridge. This happens a lot. It was collards, asparagus and broccoli. Some jalapeño tofu mixed in and it was a great meal over brown rice. I ate this by myself so I have lots of leftovers stored in the freezer. I need to build up my freezer meals, I’ve run out and have had to resort to buying lunches days I don’t feel like making something in the morning.
