The husband loves peanut butter cookies. I had seen the Bob’s Red Mill gluten-free flour poking out of the cupboard so I decided to make this recipe for Peanut Butter Cookies from Bueno Vida.
The verdict? They were okay. Honestly just your average peanut butter cookie recipe with gluten-free flour instead of regular. Unfortunately I found that only the flour change got me the crumbly issue that a lot of gluten-free products deliver. They were tasty (and I only made a 1/4 batch) but I’m glad we ate them right away. I think they might have been more crumbly the next day but we took care of it.
