Oh, the PPK never fails to entertain me with new recipes. Carrot Cake Pancakes? Well… yeah. I considered using the waffle iron because I really didn’t want to screw these ones up. And look! I didn’t! They turned out great! Instead of maple syrup in the batter I used cinnamon agave. I really liked it in the recipe but I didn’t like it as a topping, I felt it tasted to chemically. The husband didn’t mind it but I ended up using real maple syrup as my topping.
So darn tasty. And kind of healthy right? I mean, there are carrots in there!
