Okay, I figured since I made bran muffins without the damn “bran” I should make more to get in my actually bran muffin quota. Yes, I eat a lot of bran muffins, I can’t help it. Especially if they have molasses. These ones were made from the  Blueberry Bran Muffins recipe at Bit Me (I’m Vegan). It was a nice change to have fruit in the bran muffins instead of raisins. Perfect for raisin haters. I know you are out there, freaks.

These are super easy to make and taste great. I love molasses so I might have not measured that part of the recipe. The fruit keeps the muffins pretty moist a few days later, I’m sure you could cut down on the oil or substitute apple sauce in this case pretty easily. The flax egg really just adds to the texture of the wheat bran (which I now have in stock, yay for grocery shopping). A pretty solid recipe and great for quick breakfasts.
