Bunnies! It’s spring and I found this recipe for Confetti Cookies over at Meet The Shannons as part of their Betty Crocker Project. Of course they used the coveted Williams-Sonoma message cookie cutter (it’s been on my wish list for years, I still haven’t gotten around to buying it) so I decided to bust out a favourite shape: bunnies!
These cookies are so very easy and have a great pay off. The texture is awesome, I used some lemon juice instead of the extracts and it made for a very mellow flavour but I really liked that. I do love lemon so the extract would have been fine in my book but if you aren’t a huge lemon lover try just a squeeze or two of the lemon. Another citrus like orange would be nice too. Something bright to reflect the happy sprinkles! I used half sprinkles and half coloured sugar, just because I wasn’t sure if they would turn out (and my coloured sugar is cheaper). Both of them together give a neat texture to the cookie. The coloured sugar didn’t melt into the cookies so it just added a different kind of crunch.

I’m not sure, it was inherited from my grandma’s baking supplies! It’s one of my favourites.
