Okay, these are some decadent waffles. They don’t have to be but when something is called a Banana Split Waffle I want to make sure I’m getting the most out of the namesake. Minus the ice cream or whipped topping, that’s a bit much for breakfast. These are from Hearty Vegan Meals For Monster Appetites and finally something went well from this book (I’m trying to block out the pancake fiasco).
These are not a crispy waffle, at least on theirÂ initialÂ bake. That’s fine, they did have an interesting texture due to the oatmeal and corn starch, plus dried cherries in the batter. I did make these in the food processor as opposed to an immersion blender. I have one but I didn’t want to go through the trouble. Since they were banana split, I topped them with some home made strawberry jam (that didn’t gel anyway), chocolate ganache and bananas. Very decadent for a breakfast but it’s worth it once in a while.
