Following my cravings, I really wanted a raisin bran muffin. So I made a quarter of a batch of Banana Raisin Bran Muffins from Maple Spice. Of course I was all out of wheat bran and even oat bran. So much for an organized pantry. I had some wheat germ so I guess I have raisin germ muffins or something that doesn’t sound as good. I need to go shopping. The texture was a bit different but still damn tasty. I also had to cook them for a bit longer because the wheat germ didn’t soak up the liquids as much as the bran would in the original recipe.

I thought I would miss the vanilla or other spices but I didn’t really need them in this muffin. The demerara sugar top was obviously my favourite part. Oh, I didn’t have walnut oil, I just used some canola oil.

    I have been trying to break my bread for breakfast habit. This is so tempting! A muffin can count as part of my lunch right?!

      Totally! And lots of fiber totally makes it healthy. When I make them for meal replacements I add some protein powder and make them texas muffin sized ;)
