Well, it’s day 7, and this would be Sunday if I had started this on a Monday. And breakfast on the plan: pancakes. Yeah, we don’t need to go into how pancake challenged I am, but I had a doctor’s appointment this morning and an extra bit of time so I thought I’d burn the kitchen down.
I made the Spelt Blueberry Pancakes, except I didn’t want to use my spelt flour (I have some spelt bread coming up) so I subbed in whole wheat. And I thought they were pretty damn tasty. Not even burnt. I didn’t have any blueberries so I threw in some frozen raspberries. Not on the top but in the damn batter this time. Worked out way better. See? Honestly, I’m pretty damn proud of myself. The husband thinks I went out to Heidi’s and got some for the photo since he wasn’t here and didn’t smell lingering smoke when he came home from work.
Lunch on the menu was a panini but I have a LOT of meatloaf leftovers so I had leftovers. It was actually really good the 2nd time around.
Dinner on the menu was a huge salad with new potatoes and brussel sprouts. I went with the big salad, I didn’t feel like brussel sprouts. I forgot to reheat potatoes. I forgot dressing until after the photo. I forgot protein. Uh yeah, I was really just fixated on cookies honestly.
And I got to bake today!! Finally. Oatmeal Raisin Cookies were on the plan. So excited to make cookies. Woop! While they don’t surpass my favourite recipe (I went to look for a link and I haven’t posted about them on this blog, eek!), they were still pretty damn tasty. A bit cakey but still totally worth it. I of course made them big and halved the batch. I love oatmeal raisin cookies though so I’m pretty easy to please. Another day down, and 7 cookies left! Until the husband finds them…hrm!
