Happy National Chocolate Cake Day! The funny thing is I had planned to bake a cake today anyway and since I’ve been craving chocolate cake it was going to happen.

Now, I know what you are thinking: sourdough in cake. I know. Honestly I had huge doubts when I was mixing the sourdough mixture into the cake. It was pretty nasty looking but it all worked out in the end. I had to just trust the King Arthur Flour recipe.

I of course had to veganize the recipe and make my own changes. Almond milk instead of milk, and egg replacer instead of eggs (it needed the lift, it’s cake!). I didn’t actually have enough cocoa powder (I was short 1/3 cup at least) so I melted some chocolate (about a cup of chips) and added that as well. I was going for chocolatey and I got there!

I opted to make the whole cake so I can take some into work tomorrow. I rarely make a whole cake so this was fun. I did add the espresso powder to the cake but not the icing. I decided on just a plain vanilla icing using margarine, almond milk and of course vanilla with the powdered sugar. I only made half of the icing and it was more than enough, especially with the chocolate drizzle.
