sunchokes

We’re getting some interesting veggies and food in our CSA this January. First up is Sunchokes, or Jerusalem Artichokes which I guess are technically a tuber. I’ve heard of them and I think I’ve had them mashed at a restaurant.

The skin is edible like the skin of a potato but much more thin. Which is good since this would be a pain to peel, however some people do peel the tubers. Tomorrow I’ll tell you how I cooked these up and I’ll give you a hint: I didn’t make alcohol out of them! (okay, I was tempted but I’m not one to make homebrew or moonshine, hehe).
