Finally, something didn’t screw up. I was beginning to think I was cursed in the kitchen. However, King Arthur Flour rarely steers me wrong and this Classic Sourdough Waffle recipe was great.
Technically the recipe can be used for pancakes, but we all know I’m “challenged” in that area so I went with waffles. Kept it safe and followed the whole recipe. I should have halved it as I had to toss a few that I didn’t get around to eating. The sourdough is pretty pronounced in these but they were great with maple syrup. Super crunchy so you can cut them into sticks and just dip them even before the 2nd reheat (I toss them in the toaster).
For the buttermilk I used almond milk with a splash of apple cider vinegar. It really added to the sourdough tang. For the eggs I knew it was for a lift so I used egg replacer. As I said, they came out super crunchy which is how I like my waffles. Plus, the leftovers reheated well so I got a few meals out of them.
