I haven’t made pumpkin cookies all year. I was inspired by the recipe over at Vegan Heartland. Plus, I had a cup of pumpkin to use up. Now, I generally half or more recipes but since I had exactly a cup and this was a full recipe I just made the whole thing. It’s a good thing because they are fantastic.

I really like shortening cookies but I was short a quarter cup so I added some margarine. They turned out fab and stayed chewy for a few days. I sent them to work with my husband and the guys all liked them. That’s a good sign, they aren’t used to my baking yet!
