Oh hi mini cupcakes! I made a few flavours for work and this one was fabulous. The recipe is from Vegan Cupcakes Take Over The World.
But I made them gluten-free! I used the last of my King Arthur Flour and hoped for the best. In this situation it worked out perfectly. The cupcakes stayed moist and perfectly complimented the vegan cream cheese frosting I added on top. Funny enough, out of the two varieties I made this one came out the best.
