So this was the second set of cupcakes I made for work. Gingerbread cupcakes from Vegan Cupcakes Take Over The World. I’ve made them before but last time the spices were honestly too in your face. Penzeys has some quality going on and it was just a bit too much. This time I halved the spices and it wasn’t enough. Just turned out a bit too subtle. Go figure. I guess next time I’ll go with 3/4’s? Who knows. I love gingerbread so I’ll figure it out.
I paired them with a lemon vegan buttercream. I just kept on adding fresh lemon juice instead of other liquids (thanks lemon tree). Turned out great.
