Rustic Sourdough Bread

Oh sourdough. Oh bread actually! It’s been a long time. I’m actually trying to get another starter up and running so I had some “discard” starter to use up from the last feeding. I even have a cute starter jar from King Arthur Flour.

After I made this basic recipe I realized that my starter is way too dry and I want to work with a wetter dough. It’s just so easy to add more flour, I need to stop that. The starter is fine as a drier starter but I think I’d get better results with it more wet. And so it starts. I just threw it in one of my brotforms for the final rise and got some cool marks. I didn’t slash it because I was too lazy. This loaf was pretty darn good, but not so sour (the starter hadn’t fully developed yet). It was dense like a sandwich loaf yet had a very crispy exterior. I made a big bread sandwich with roasted garlic hummus, tomato, smoked tofu and lettuce. So very very good. I’m glad I’m back to baking my own bread!
