Scones are hit and miss. Some days they are a mess and others they are a dream. If they have blueberries they are 90% of the time a mess. Stupid blueberries. I decided to do a quick strawberry scone and found this recipe for Strawberry Sunrise Scones over at Baking Bites.
These were surprising tender and “buttery”. I didn’t have orange flavoured soy yogurt so I just used almond milk until they came together. I honestly mixed them in the mixer (so lazy) instead of the food processor and they were not gummy or dense at all. I used Earth Balance spread for my margarine also out of laziness. I don’t recommend the mixer for scones but it’s always a happy surprise when things work out.
