Apple Bread. A classic. I found this recipe over at Choosing Raw and knew it was going to be a part of my Vegan MoFo. I had all the ingredients anyway so I set off to work. The recipe itself is easy and whipped together in no time. I was a bit bummed with how it turned out though. The flax eggs didn’t give it any lift honestly so it was dense. Okay. But it was dense and crumbly. I’m kind of bummed that it didn’t have a lighter texture, not bread like but at least something more akin to cakey banana bread. I didn’t even overload it on the mix-ins for a change. Kind of a disappointment honestly. I might make it again with a different egg replacer that hopefully will help give a bit less of a “brick loaf” texture to the overall finished product.
