Again with the quick. I just haven’t been into baking that much. I had some silken tofu to use up in the fridge and thought I needed a quick frozen fix. This totally isn’t a recipe so I’m not going to publish it as such.
I dumped 6oz of silken firm tofu (about half of a tetra pack) in my food processor with 6oz of frozen cherries. Blended that up quite a bit and then drizzled in some agave nectar to taste. I generally like pure sugar but this time I added about 2-3 tablespoons since the cherries were not really sweet at all. Sweetened fruit would cut down on the added sugar a lot. Blend blend blend and it turns out to be a thick smoothie you can eat with a spoon. The 6oz of tofu here made 2 servings. I tend to do this when I just want something quick and sweet. As I said I generally use regular sugar but the agave was already out on the counter.
