I admit it, the photo when I was browsing Tutti Dolce’s blog really drew me in. I mean, I stopped and stared at it for a long time. I had to make these Lemon Glazed Blueberry Bites. For this recipe I was really dying to have some of those little tiny P.E.I. blueberries or wild blueberries. It wasn’t meant to be so I just sucked it up and used regular sized blueberries. *staples hand to forehead*

So lemon and blueberries are pretty much a match made in heaven. I had to veganize this recipe but I had some tofutti cream cheese, margarine and of course egg replacers. I wouldn’t use flax in these as the texture really needs to be soft and light. I made them with my small scoop and I still got 15 out of a quarter of a batch! Make these to share, or not. It’s up to you and make them small so that they are easy to just pop in your mouth every time you wander into the kitchen.
