Aw yeah, strawberries. The sun was setting when I took this photo and it was dull and grey outside. Just trying to extend summer and that’s pretty easy with the heat that is going on in the bay area. Anyway, the cake was very happy in my mouth. That could be from the lack of processed sugar in a long time. Anyway, this recipe from 500 Vegan Recipes is pretty easy. Honestly you cook the strawberries just as you would for jam so you could substitute a high quality jam in this recipe and save some time.
Since I didn’t use a pretty bundt pan I added powdered sugar on top to dress it up a bit. The husband ate it with chocolate ice cream anyway, go figure. This is an awesome start to Vegan MoFo, I hope all the recipes with fruit turn out as well.
