Aw yeah, strawberries. The sun was setting when I took this photo and it was dull and grey outside. Just trying to extend summer and that’s pretty easy with the heat that is going on in the bay area.¬†Anyway, the cake was very happy in my mouth. That could be from the lack of processed sugar in a long time. Anyway, this recipe from 500 Vegan Recipes is pretty easy. Honestly you cook the strawberries just as you would for jam so you could substitute a high quality jam in this recipe and save some time.

Since I didn’t use a pretty bundt pan I added powdered sugar on top to dress it up a bit. The husband ate it with chocolate ice cream anyway, go figure. This is an awesome start to Vegan MoFo, I hope all the recipes with fruit turn out as well.
