Vegan MoFo Day 2: Banana Oat Bundles

I’m trying to actually plan out some recipes since I need to have the proper fruit on hand. However, when I was baking the Blueberry Bounty Buns yesterday fromĀ Vive Le Vegan!, on the opposite page was these Banana Oat Bundles.

I felt like it was a cop-out, I mean, why not just bake from the same damn book for 31 days? (oh yeah, I did that last year)

After I got over myself, I baked up a batch and was so happy I did. Again, I could have eaten this last month and it could be gluten-free with gluten-free oats. These are tasty little bites that are perfect for those over ripe bananas. Don’t worry if you don’t have a food processor or blender for the ground oats. I actually use a coffee grinder for my oats. I also don’t keep quick oats on hand and I used full rolled oats with no problems. You could also pulse regular rolled oats a few rounds to get quick oats.

    hmm…I have this book and have never really looked at either the blueberry buns or the banana bundles. You have encouraged me to pull that book out soon. Those look delicious!

      You should! They are both super easy. I always forget to pick this one up out of my huge pile so I feel ya.
