Vegan MoFo Day 2: Banana Oat Bundles

I’m trying to actually plan out some recipes since I need to have the proper fruit on hand. However, when I was baking the Blueberry Bounty Buns yesterday from Vive Le Vegan!, on the opposite page was these Banana Oat Bundles.

I felt like it was a cop-out, I mean, why not just bake from the same damn book for 31 days? (oh yeah, I did that last year)

After I got over myself, I baked up a batch and was so happy I did. Again, I could have eaten this last month and it could be gluten-free with gluten-free oats. These are tasty little bites that are perfect for those over ripe bananas. Don’t worry if you don’t have a food processor or blender for the ground oats. I actually use a coffee grinder for my oats. I also don’t keep quick oats on hand and I used full rolled oats with no problems. You could also pulse regular rolled oats a few rounds to get quick oats.
