The husband loves potato salad. Wait, I stand corrected: his mom’s potato salad. I’m pretty sure no other will live up to it. So I dove into this recipe knowing that it wasn’t going to live up to the magic potato salad. Especially since it’s vegan.
I used veganaise and I used it sparingly since I’m kind of off the oil but this recipe is regular McDougall friendly. I think that is why the guy didn’t like it so much since it wasn’t really sauced a lot. However, since I really don’t like potato salad this actually was a pretty good gateway salad. I actually ate most of it!
