I always feel weird buying veggie burgers since they are so easy to make. But honestly they don’t always stay together. This recipe for Mexican Black Bean Spinach Burgers was interesting.

Pretty much, you throw all the ingredients in a food processor. I had to add some water to get things moving but other than that the recipe is pretty good. I grilled them in Mr. Foreman since I was sure they would fall apart when I flipped them (too much water). Before grilling they were quite green. After grilling they turned brown. Magic! The texture was pretty chewy, I was surprised. Not meaty mind you but not bad at all.
