Ah, nighttime photos, sorry about that. Anyway, I’m still searching for local vegetarian red beans and rice and until then I guess I’ll just make them at home. I used this recipe from the McDougall Quick and Easy Cookbook for Louisiana Red Beans. I totally forgot I had run out of bay leaves and this recipe really needs it. I only had 2 cans of beans so I just used that and ended up tossing in a whole 15oz can of tomato sauce. It made it a bit sweet. I could have went a lot heavier with the spices but I wasn’t sure if the husband was going to have any.

Still tasty and a pretty quick meal. That is, if you have rice already cooked. I really love my rice cooker!
