I haven’t made muffins in a bit. Found this recipe for Carrot & Cran Oat-Bran Mini Muffins and I thought mini muffins would be perfect.
Mini muffins rock. These have a lot going on. Honestly I’m surprised they didn’t have chia and a few other ingredients but they worked. The carrot was great and they had carrot cake spices going on but were a lot more dense and bread like (because they are muffins, duh).
I subbed the usual stuff, almond milk and egg replacer. They cooked up great and the timing was perfect in my oven. I only made a third of a batch so I ended up with 12 mini muffins which is more than enough for us at home.
