I love lemon and I have a lemon tree so I’m always on the hunt for new recipes. I saw this one for Lemon Brownies over at Une Garmine Dans La Cuisine and thought it would be a great one to try to veganize.
I made a quarter batch and used my trusty 4×4 pan. Aka, a nice big brownie to share. I ended up adding a half a teaspoon of egg replacer because I wanted to make sure it had a bit of lift and of course subbed out the butter for margarine. Since I have a hatred of almond extract I just left it out. I really loved the flavour and texture of these and I’ll be sure to make a full batch sometime soon. It was like a cross between a subtle pound cake and a regular cake texture. I guess that’s brownie texture, but not super “fudgey”. A fun one for summer, that’s for sure.
