Always on the hunt for good cookie recipes. As I’ve stated before, there’s nothing wrong with a plain chocolate chip cookie but it does get boring to write about.
I found this recipe for “The Best Chocolate Chip Cookies in the World” over at The Vegan Adventures Of Meggie and Ben and thought it would be fun to try.
But you have to wait a day to eat them. As I found out when I wanted a chocolate chip cookie and started the recipe.
Is it just me, or when I want a chocolate chip cookie it generally means NOW, or maybe in 20 minutes if it is hot out of the oven? This is probably a very bad recipe for dough eaters honestly as it has to sit in the fridge overnight. Or maybe it’s a good recipe for dough eaters since they can just eat the dough.
I trucked on though and made the cookies the next day since I don’t eat dough. Even vegan dough, it just squicks me out.
And they were pretty damn good. A nice soft cookie and the measured chips isn’t a real life underestimation (you know how you always have to add extra because recipes skimp? This one doesn’t! They were fantastic warm and even when they cooled off they were pretty solid in texture and flavour. I did forget to salt the tops and they were still fine. I made a third of the recipe and it was great. I’m glad I pressed down my dough a bit as it didn’t spread much. The cake flour really made these great and I’ll probably think about doing this sub more often.
