I was looking for something a bit different and decided on a higher protein snack. I found these over at Meals & Moves and thought they fit the bill. First time I made something cookie like smaller than called for!
With these you still get the protein powder texture. I decided to use my hemp/rice protein powder and I could still detect a bit of the grainy texture. This would have worked way better with my soy powder. Also, the warning against baking them too long is no joke. They really do dry out. I did overbake mine and there really was a difference.
I really do like the idea of these, plus I haven’t used chia seeds in a long time. Dried cherries never hurts anything either. Next time I should really pay more attention so they don’t dry out.
