Wacky Cake For My Anniversary

Wacky cake. It’s that accidental vegan chocolate cake that everyone in North America probably has had at one time. It’s just a plain chocolate cake, without eggs. Amazing! Okay, we aren’t that impressed around here with egg free baking. But still, easy peasy cake that doesn’t call for any sort of special ingredients.

I didn’t want to bake for my anniversary but we ended up at a sushi restaurant and no dessert. Boo. So on the 4th I baked myself a damn cake. I didn’t feel like going all out since I really only wanted plain chocolate cake. The recipe I used was from How It All Vegan but if you do a search the recipes are everywhere. I made it double decker and filled it with strawberry jam. And then I figured it needed some icing and whipped up a vegan chocolate buttercream. Since it was for me there was no fancy frosting going on, just a home made swirl. Not that the cake needs frosting I guess, but it did that day.

Don’t worry, I let the husband have a slice, since he had an anniversary too. I might even be nice and let him have the last piece. Maybe…
