Tuscan White Beans With Sage From The Pressure Cooker

A great recipe from Great Vegetarian Cooking Under Pressure. I seriously don’t pressure cook that much anymore, mostly because I’m lazy. Which is really damn stupid since it is so quick. I had bought some nice looking local dried beans at the farmers market and wanted a quick way to make them.

I pulled out the pressure cooker and decided on a Tuscan version. They did take longer than the book said probably because I did a quick soak instead of overnight. Still, the garlic and sage was a great way to enjoy these beans. I didn’t bother adding the oil but when serving (after the photo) I did a quick drizzle of garlic olive oil. Totally optional and a very tasty protein.
