I honestly don’t know what is wrong with me. This is the second time I’ve tried to make lemon curd and it turned out bad. Like, gelatinous bad. I don’t throw the word gelatinous around with ease.

It more than likely wasn’t the recipe since I’ve already had a fail with lemon curd. In fact, the pastry was really nice, like a shortbread. The curd? I dunno what the hell happened. It was going nice and smooth then the next second it curdled and turned into a mess. I was stirring and it was wonderful. Then it was gloop and meh. *sigh*

I pretty much have an endless supply of lemons so I can keep trying. Anyone have a nice vegan lemon curd recipe I can try to destroy?
