I don’t know. I really had big aspirations for these molasses cake bars from 500 Vegan Recipes. I love molasses. I used to just eat it plain on bread growing up. Blackstrap is my favourite. I made these during the week for a quick dessert.
But when you have a cake recipe that calls for no other sugar besides molases, it just kind of falls flat. Yeah, it’s “healthy” but it needed a tad more sweetness. And that was the only issue with these! They didn’t end up getting eaten just because they were “meh”. If I make them again I’ll add a little bit of brown sugar to help them out a bit.
