I’m not really sure if I can call this “Lotsa Veggies Lentil Soup” since I halved the recipe and doubled the lentils. It is a recipe from Appetite for Reduction which I decided to give a whirl. Half assed.
Half assed? Yup. Mostly because all afternoon I wanted lentils. I had pre-cooked lentil in the fridge, which is fine but I had to come up with a plan. A plan to make the husband eat said lentils since he’s not a super fan.
However, this got inhaled. I did make a half batch of the “soup” (excluding the zucchini), and kept the lentils the same (honestly, I just dumped the whole package of pre-cooked Trader Joe’s lentils in the pot after I had softened the veggies in some broth instead of oil). Since the lentils were cooked I added the tomato sauce and as much broth as I thought I would need to make a stew and cooked it about another 20 minutes. The husband loved this with falafel chips, sort of like a chili.
