Honestly, there is nothing special about these Chocolate Chip Cookie Dough Peanut Butter Cups from How Sweet It Is, but it doesn’t mean they aren’t tasty. In fact, they are pretty damn good. I used margarine to make them vegan but they’ve been done before. However, when it is too warm to turn on the oven, it’s time to get creative.
I didn’t follow the instructions. There was a lot of “do this, wait, do that, wait” and honestly I didn’t want to wait. I cooked the cookie dough on the stove and then stirred in everything. Popped it in the fridge as I melted the chocolate and then lined the mini muffin tins with chocolate. Popped those in the freezer. About 10 minutes later the cups were cold and so was the cookie dough. Then I scooped the cookie dough into the cups, reheated the chocolate and then topped them off. Popped in the freezer and voila, done! In about 20 minutes.
