I might wear out my “c” key if I keep on typing Carrot Cake Coffee Cake! Anyway, I love carrot cake. I love coffee cake. How did I not think to marry the two earlier?

Thank goodness for Dorothy. I made a half of a cake and I made it vegan. Well, I actually made a full cake, but the first half cake I made kind of flopped. I was groggy and forgot some important ingredients. Like carrots. Yeah. Maybe I should have more tea before I bake on the weekend. The second half cake, WITH all the ingredients (minus the nuts in the streusel) turned out way better.

I used egg replacer for the egg, almond milk and for the streusel I used oil instead of butter. It turned out great. It was much more mellow than I expected. I’m used to a much stronger carrot cake flavour but this was nice. I’d make this for a brunch party for sure. Next time I might add raisins or nuts to the batter. Maybe go crazy with the pineapple if I have any on hand!
