Happy Mother’s Day! I hope you all are having a good day. The cat let us sleep all night which is a gift in itself. Today I just finished baking up some Chocolate Cherry Oatmeal Moon Pies from Annie’s Eats.

The oatmeal cookies themselves are wonderful. Chock full of everything honestly. I did flatten them a bit and they didn’t spread much. I used margarine and egg replacer as my vegan subs of choice. I decided to make these last minute and I couldn’t find any Ricemellow up here yesterday (as a replacement for marshmallow fluff. They have it down at the Cupertino Whole Foods, but I guess not at the one by my house.) so instead I filled them with a vegan vanilla buttercream. Just to tip the scale these are drizzled in chocolate. Truly decadent.
