I really love lemon bars. With a lemon tree I can’t believe it’s taken me over a year to try out a recipe. The Joy Of Vegan Baking never steers me wrong, so I went with that recipe.

They turned out great! Smooth yet with the perfect amount of sweetness. The husband pretty much claimed them all. I was worried about them gelling up but there was no problem.  And yes there is tofu in them but you can’t really detect it. It just makes for a smooth filling.
