I get a lot of questions on how to be a better baker, vegan or not. First and foremost is quality ingredients. Don’t buy those cheap waxy chocolate chips. Just sayin’. Second is consistency, and I do that generally by weighing my ingredients. I don’t write out recipes in grams or ounces because most people measure instead of weigh. I do half the time too. It’s not that big of a deal, but when you want a perfect loaf of bread you are going to have to weigh ingredients.
I had a cheap food scale that would crap out after 2 pounds so I had to weigh small batches and add (especially with big batches of bread). OXO contacted me and asked me if I wanted to try one of their Good Grips 5 pound food scales. Yes! I had just had a headache weighing some apples and was pissed off. This one was easy to use, and the display part pulls away from the base so that you can use a big bowl or plate if you want. I just was weighing small grams of tofu so I didn’t need to do that. It was super easy and accurate.
