I was pretty much down for the count on Saturday. I think I slept 22 out of the 24 hours. Still, I didn’t want to miss Easter! Bunnies and chocolate, I can relate to this holiday! Sunday I was planning on baking a lot but I honestly didn’t have the energy.
So yesterday I needed something quick and tasty and good for company. You can’t ever really transport pudding cakes, so that was a great option. I had How It All Vegan already on the counter from earlier in the week, so I checked out the Chocolate Upside Down Pudding Cake. Super easy. I made it after dinner and it was ready 45 minutes later. Guests went back for seconds and I did serve it with ice cream as recommended. I opted for it plain and it was super sweet and chocolatey. The perfect way to end off Easter. Now, to get some more rest and maybe some vitamins!
