I haven’t made a quick bread in awhile! I still had some rhubarb and remembered this recipe from Vegan Heartland.
Honestly, it took me a good half hour more in cooking time to get this baked, and even after it was fully cooled there was a tiny bit of underbaked bread at the top. I did use a cast iron pan, but I think next time I would use glass. It doesn’t really need that crust on the sides. I’m also not sure if I’m sold on the chocolate and rhubarb, but it was fun to try. Instead of the topping in the recipe I just used demera sugar. Easier and just as tasty and crispy. Don’t get me wrong, this was a fun recipe to try and the bread will get eaten. I’m always up for new combinations!
