Having Â a friend over after dinner is an excuse to bake. It’s been covered before that I’m not in love with nuts in my cookies and white chocolate, yet I keep them fully stocked in the pantry for the husband. I found this recipe for White Chocolate Lemon Macadamia Nut Cookies over at Maple Spice and honestly their recipes are always pretty good so I had to give it a go.
I finally used up the last of my white chocolate vegan chips in these, and some of my macadamia nuts. I love the fact that they had a touch of lemon in them, and I added even more with a quick squeeze of the fruit. Since I made larger cookies I had to bake them for quite a bit longer and they got crispy on the bottom but were still chewy in the middle. They went quickly!
My stomach was a mess so I wasn’t really tempted until this morning to have a bite.Â I loved the lemon in them. This is a really good recipe, and I liked it better than Macadamia Ginger Crunch Drops I made earlier. That’s how much I liked the lemonÂ addition as well as the crunchy yet soft texture.
