I had bunch of quinoa and decided to bake. I found this gluten free recipe over at Fannetastic Foods and thought it was a great idea. Of course I made them vegan as I didn’t have any eggs on hand. I didn’t even use egg replacers, I just left it out. They were a bit chewy which is one problem with gluten free baking that is pretty common. I doubt that adding the egg would have helped the texture honestly (and I made a half batch). However, the taste was worth it. I made them in mini tart pans so they were a cute shape. I’m easily amused.
