I do love oatmeal. I was wanting cookies and haven’t made much from World Vegan Feast. The anzac cookies bounced right off the page.

These were crisp on the bottom, yet the brown sugar kept them soft on the inside. They are a great traditional oatmeal cookie. TheĀ AussiesĀ have the right idea. Sometimes you don’t need the chocolate chips, raisins or other things added. These make an impact on their own.
