Sour Cream and Cherry Muffins From Choosing Raw

I still had some vegan sour cream to use up so I went on the bookmark hunt. I found these Sour Cream and Cherry Muffins and I already had dried cherries in the pantry. Perfect!

I didn’t make my own sour cream since I had some on hand. It is pretty cool that there is a recipe though, that stuff can get expensive and I really only use it to bake. I also didn’t use spelt flour and I think that was a mistake. I used all-purpose and they were a bit rubbery. I probably overmixed them as well, I’m not blaming the recipe on that either. The flavour was good though and it was nice that they were not really that sweet. I don’t think I would have liked them as much without the crumble on top, mostly because I’m a fan of sugary muffins.
