I feel like I should call these new “farmer’s market finds” CSA finds. Since I haven’t been to a market in awhile, yet I’m loving my CSA. Anyway, greens are something I don’t generally buy unless its kale or spinach. Swiss chard got delivered and I decided to do my old standby recipe with white beans. Let me try to write out a basic recipe for you:

Garlicy Swiss Chard with White Beans

Ingredients

  • 1/2 small onion I used shallots
  • 4   cloves of garlic chopped
  • 2 Tbsp olive oil
  • 1 bunch of swiss chard destemmed and chopped
  • 1/4 - 1/2 cup water
  • 1 can of white beans drained and rinse
  • Salt and pepper to taste

Instructions

  • Sautee the onion and garlic in the olive oil until soft. Add  the swiss chard and toss. Add about 1/4 cup of water to the pan and put a lid on it until the chard has wilted. Depending on the size of your pan, you might need a half of a cup of water. When wilted take off the lid and add the white beans. Heat through and it should be done by the time the water has evaporated.
