I still haven’t fallen in love with vegan mac and cheese. It is just… horrible. Hell, I barely like regular mac and cheese, it’s gotta be KD. Anyway, one comfort food that brings back childhood memories that is super easy to veganize is chili mac. It’s called so many things, but my mom made this for me and it was filling and wonderful.

I used to use Manwich, 1 pound of fake meat (boca, match meats) and half of a pound of elbow macaroni. That’s it. The husband puts shredded cheese on his. Have you read what is in Manwich though? Ugh. That’s how it kind of phased out of my menu rotation. I found this recipe for a Manwich copycat and wow, it really tastes good! I didn’t have a cup of ketchup, I used about a half of a cup. And it was low sugar ketchup. Anyway, it was sugary enough and it was a really great copycat recipe. Totally hit the spot, topped with lots of freshly ground black pepper.
