It’s rare that the husband requests non-chocolate items, but it happens. He really wanted banana nut muffins. Who am I to deny him? So I flipped through Veganomicon and whipped up these Banana Wheat Germ Muffins and added walnuts. They were spot on and the texture was light and fluffy. I’ve been running into a lot of more solid muffin recipes (let’s call them “hearty”) but these were light and fluffy and perfect. Probably because I didn’t really mess with them. This is a recipe I’d make for a brunch or a get together since you can pair it with other things and it doesn’t necessarily feel like a meal in itself (for me anyway). That’s sometimes a good thing.
