Red Beans and Rice From 125 Best Vegetarian Slow Cooker Recipes

It was my fake “new years resolution” to break out my crock pot / slow cooker. Really, I just needed to pull it out of it’s hiding space. I even have liners for it, so cleaning it is not even an excuse. It is programmable, and I still didn’t use it. It was chilly yesterday (and today, I woke up and it was 26˚!) and I wanted beans.

Why can you never get a good photo of beans or stews? Trust me, this recipe from 125 Best Vegetarian Slow Cooker Recipes was tasty. I wish it had more beans though. My beans were a bit too soft after 8 hours on low, so I might do 7 next time. Also, I highly recommend adding the red wine vinegar, it always gives soups, stews and beans a wonderful pop of flavour. Still, this was really tasty and great to dig into after a long workout.
